Hi duncanyoutzy,
The 3.5mm type socket on the back of some Sony stereos for steering wheel adaptors was designed to connect directly to a Sony accessory that would stick on the car's steering column - a bit like an extra stalk control. Not sure whether Sony still sell these adaptors (I used to have one - an RMX4S I think).
However, there are companies such as Connects2 (http://www.connects2.co.uk/) that do sell a variety of interfaces to allow the Sony stereo to work with a car's own steering wheel controls. Basically it depends on whether there is an adaptor for your particular car.
By way of example, below is a link to a store I found that stocks the 'Connects2' adaptors - the one in the picture is the bit that plugs into the back of your Sony unit, and then you would need an additional lead that connects to this one that would be specific to whatever car you have.

My advice though would be to talk to a specialist car audio dealer, tell them what stereo and car you have, and most good dealers would be able to advise you what bits you need.
Hope this helps.
