Are you by some chance using non Sony lenses, I had this problem using a Sigma lens, I had been adjusting the aperture on the ring on the lens and I was getting the camera suddenly adjusting it's shutter speed and sometimes it's ISO on its own, actually the camera was putting itself in auto ISO. When I put the aperture ring into A and started setting the aperture on the camera this problem disappeared. It was a Sigma lens compatibility problem. So now when I shoot full manual, (which is what I do for video) I set the aperture ring to A and adjusting the aperture on the camera.

Sony A7IV manual mode auto adjusting settings

Help please. I can't work out why, when I'm in manual mode, the settings are still auto adjusting. If I set the apeture, the shutter speed auto adjusts and vice versa. The same happens if I adjust the iso. Am I missing a setting somewhere? I currently do not have full control in manual mode.
